FLAG HILL RED


DeChaunac and Marechal Foch come together to create a wine that is gently fruit-forward with notes of berry and subtle cherry. A very easy drinking red- subtle for the sake of subtlety. A low-tanning red with soft mouthfeel. This wine is perfect for a summer barbecue or a pasta dinner.

TA:  7.2            PH: 3.62          ALC: 12.1%

Grapes/Blend:  13% Marechal Foch – Flag Hill Grown; 87% DeChaunac – 80% Flag Hill Grown

Aging: 1 year in used HT and MT+ Canton 36 month air-dried barrels

Notes from the Winemaker: The majority of the fruit comes from Flag Hill allowing us strict control over the harvest parameters and the ability to make early interventions to the wine. At crush, we use a large amount of sacrificial, exogenous tannins to precipitate many of the large proteins in the wine before primary. This process allows us to help retain some tannin that would otherwise be lost during the wine-making process. The wine is put through ML at the end of primary using a strain that is known to respect fruit. Partial ML is done in stainless steel and then finished in oak. The wine’s blend is slightly different from year to year, but is always focused on maintaining the fruitiness of DeChaunac, and aiming for a nice balance of tannins.
